Well, I have this bump on my thyroid that we’re now watching…hoping that it shrinks. My thyroid numbers were all normal, but I am having symptoms of hypothyroidism. This bump has me concerned, it hasn’t shrunk yet, that I can tell, and it has been almost a week.

The Dr. put me on synthroid….I sure hope it works and brings the swelling down. I hate the thought of a needle going in my neck, which is the next step.

I pray it doesn’t get to that…

A lot has been going on in our lives lately. Since October we have had a couple of illnesses, 6 deaths of friends and relatives, 2 of our cats died, a windstorm messed up our roof and took out our lights and cable for two weeks not to mention it caused a large limb to fall on my sons car.

This has kept me away from almost everything on the internet, including my wonderful blog! :-( Won’t happen again if I can help it!

About my sons car, did you know that most homeowners won’t cover a limb falling on your own car?! They say that falls under your auto insurance.

Too bad we had only liability…that little car was nice. :-(

These past few days have been very lazy around here. Kids aren’t getting up at their normal time, I’m sleeping in later….what’s going on?

I think I know…we stopped going to the YMCA. We were exercising every day, eating healthy..things were great. Then we got sick…one by one each of the children were sick with a stomach bug, then a head cold. To top it all off, we just moved. It took two months to get through all of the illness and the moving.

Things should be getting back to normal…but they’re aren’t…we’ve been spoiled these last two months. How in the world am I going to get everyone back on track?

My daughters and I are vegetarian. We won’t eat any meat. (and yes, that includes fish. Fish are animals, too, therefore if we ate them we wouldn’t be vegetarians. You’d be surprised how many people, upon finding out we’re vegetarians, ask us if we eat fish.) We don’t have any problem getting the vitamins and nutrients we need and protein can be found in many other things, it isn’t exclusively found in meat. We’re asked quite often where we get our protein….we just smile and say, “The same place a cow gets it.” That usually quiets the person.

Because of this, when I include recipes here, they will almost always be vegetarian. They will, however, have been fully tested on meat eaters.

Veggie Goulash - goulash was originally Hungarian…but Americanized goulash has taken on many forms. I’ve tasted it many different ways with varied ingredients. I think the word goulash, for us in America, just means a mixture of foods, usually containing some sort of ground beef. Here is our quick and easy Veggie Goulash:

Ingredients

Boca crumbles - 1 bag

Spaghetti Sauce

Cheese - your favorite flavor, but American is best broken in to small crumbles - use as much as you would like. This is a taste thing. Be careful, though, not to use too much as to take away from the spaghetti sauce.

1 medium onion- diced

Extra Virgin Olive Oil

Egg Noodles

Prepare noodles as normal (boil), drain then place back in pan. Pour spaghetti sauce over noodles and return to medium heat.

In skillet, heat about 3 tbs of Extra Virgin Olive Oil. Once hot, saute diced onion until brown. Place boca crumbles into skillet and cook until lightly browned. Pour in to noodle mixture.

Add cheese to noodle/boca mixture. Stir until melted and mixed well.

You can use any spices you’d like to use with this. Sometimes we add no spices, sometimes we go all out. It just depends on what you’re in the mood for. :-) You can also add cooked veggies (squash, carrots, celery, etc.). Be sure to make the pieces tiny, though, so the kids will eat it!

Having a Baby at 47?
When I think about what I may be doing when I reach 47 having a baby isn’t at the top of my list. There is one reason it may be bumped to the top of my list, however, and that would be to save the life of one of my other children. I am a typical mom, I would do *anything* to save my childs life; walk through fire, wrestle a tiger, walk cross Country barefoot on nails and yes, even have a baby at 47.
