I absolutely hate moving. Having to go through everything, make sure you’re only packing things you really want to keep. It’s even worse if you’re downsizing … going in to a much smaller home than you had before. This is what we have done.

Our old house was about 3800 square feet, our new is about 1400 square feet.
Our old house had a very large pole barn, the new house doesn’t.
Why would we do this? Because the old house was too big. Too much to keep up with. With four busy kids, homeschooling and a husband who works a lot, it is so much easier to keep a smaller house clean.

The kids are happier, I’m happier…

These past few days have been very lazy around here. Kids aren’t getting up at their normal time, I’m sleeping in later….what’s going on?

I think I know…we stopped going to the YMCA. We were exercising every day, eating healthy..things were great. Then we got sick…one by one each of the children were sick with a stomach bug, then a head cold. To top it all off, we just moved. It took two months to get through all of the illness and the moving.

Things should be getting back to normal…but they’re aren’t…we’ve been spoiled these last two months. How in the world am I going to get everyone back on track?

My daughters and I are vegetarian. We won’t eat any meat. (and yes, that includes fish. Fish are animals, too, therefore if we ate them we wouldn’t be vegetarians. You’d be surprised how many people, upon finding out we’re vegetarians, ask us if we eat fish.) We don’t have any problem getting the vitamins and nutrients we need and protein can be found in many other things, it isn’t exclusively found in meat. We’re asked quite often where we get our protein….we just smile and say, “The same place a cow gets it.” That usually quiets the person.

Because of this, when I include recipes here, they will almost always be vegetarian. They will, however, have been fully tested on meat eaters.

Veggie Goulash - goulash was originally Hungarian…but Americanized goulash has taken on many forms. I’ve tasted it many different ways with varied ingredients. I think the word goulash, for us in America, just means a mixture of foods, usually containing some sort of ground beef. Here is our quick and easy Veggie Goulash:

Ingredients

Boca crumbles - 1 bag

Spaghetti Sauce

Cheese - your favorite flavor, but American is best broken in to small crumbles - use as much as you would like. This is a taste thing. Be careful, though, not to use too much as to take away from the spaghetti sauce.

1 medium onion- diced

Extra Virgin Olive Oil

Egg Noodles

Prepare noodles as normal (boil), drain then place back in pan. Pour spaghetti sauce over noodles and return to medium heat.

In skillet, heat about 3 tbs of Extra Virgin Olive Oil. Once hot, saute diced onion until brown. Place boca crumbles into skillet and cook until lightly browned. Pour in to noodle mixture.

Add cheese to noodle/boca mixture. Stir until melted and mixed well.

You can use any spices you’d like to use with this. Sometimes we add no spices, sometimes we go all out. It just depends on what you’re in the mood for. :-) You can also add cooked veggies (squash, carrots, celery, etc.). Be sure to make the pieces tiny, though, so the kids will eat it!
